hi friends. its me and yes i am back from taking some time away from the socials. its amazing what sometime away from technology can do — rocket science i know. its been a slow rise this morning but i am here with my coffee ready to catch up with you all.
this past weekend we went to Universals new theme park Epic and woah - its amazing and honestly just mind blowing. shoutout to my mom for hooking us up with tickets for our birthdays. you know i will be sharing all the deets with you along with some of my recent recipes i’ve shared online. okay i think that’s it for now lets get into it.
the fun stuff






for our birthdays we were lucky enough to get invited to Epic Universe which does not officially open until I believe May 22nd. we got to enter the park through the Helios hotel that connects to the park which is something unique to this theme park making it feel extra immersive. 10/10 definitely would recommend !
vegan tiramisu - need I say more ? this was my sisters birthday cake request and honestly I love it. nothin says you are a very grown up 19 year old like celebrating with tiramisu.
to make tiramisu you need these light lil dainty cookies called, lady fingers. this was my first time making a vegan version and after some recipe working they came out crispy, light and flakey - perfect for dipping and soaking in rich espresso. don’t worry the recipe will be out very soon.
the way this crispy rice salad has been living in my mind non-stop. now that I have made it and tried it - i can confirm that it is worth the hype. fresh crispy cucumbers smothered in a peanut dressing. count me in.
here’s us feelin very spoiled enjoying the day with my mom who is actually the best person to navigate theme parks with. this was also Lina’s first time at Universal ever !

i cant leave you guys hanging on the details around the new park because there is tea that i just got to share.
if you haven’t heard, its just about impossible to get on the Ministry of Magic ride and to save anyone the frustration - guest services is not going to be of any help. long story short to get on the ride there is a virtual cue on the app. naturally when the virtual cue opens everyone in the park is trying to get a reservation time and the app crashes. here’s what we discovered.
there are 3 times throughout the day that the app will let you into the virtual line 11am, 3pm and 6pm. there were several times that I almost got through and was able to select a time but did not make it to the next screen where you get the QR code. the key is to get in at 11am and stay there all day keeping that screen open and essentially trying to get a spot. if you have multiple people with you - try to get everyone on the same page so that way maybe one person in your group can get a reservation. if you leave this page shown below its game over so someone in the group has got to keep their phone on, open and stuck to this virtual cue to check on it all day. if all else fails and you are not able to reserve a time - there is one last option and its what we did to get on the ride. SO ( stay with me here ) there is a cue to get into the lobby of the ride which is what you see down below in the 1st of 3 photos. that is a cue to see the entrance of the ride. while you are waiting its possible you may be waiting next to a group that actually has a reservation for the ride. each person/group who has a reservation is able to sort of add on an additional person. so while we were waiting we were next to a family that essentially had 3 plus ones and they were nice enough to sort of adopt us and let us join their party. without these nice strangers we would not have been able to ride the ride so honestly i think that’s maybe the better and less stressful way to go about it.

recipe round up
i wanna try switching things up a bit and with that i think ill be slowing down a bit. posting one recipe a week instead of two and ill be sending out this newsletter every other week instead of every weekend.
why you may best asking ?
well a couple answers. first answer is that its a lot and i need to do better about respecting my capacity. posting two recipes a week and editing all that content was making my head spin. second answer is that outside of social media my work volume has picked up creating the need to restructure and pivot. lucky for you, if you are subscribed to my Substack, you never have to worry about missing a thing.
Crispy Rice Salad + Peanut Dressing
if you haven’t seen it, its been quite popular online with all kinds of creators recreating and sharing their take of this trendy salad. you can use all kinds of veggies but cucumber and red cabbage seems to a good base for the salad along with the peanut dressing. sometimes salads can be a little boring and this salad literally couldn’t be anything but the opposite. each bite is full of flavor from the fresh crispness of the veggies and the creaminess from the dressing. and if you enjoy a good fried rice - this is right up your alley.
