its been a week my friends — but nothin a deep breath, a shower and a nice cup of tea can’t handle. the weather has been perfect, Glennon Doyle has announced her new book tour and Salem has been as cuddly as ever.



i’ve been a fan of Glennon Doyle for some years now and have been an avid listener of her podcast however, I have yet to read her books — until recently. needless to say I love Untamed and yes, I know I am very late to the game. lets just say I was saving it and it was worth it. its been a goal and desire of mine to read more and let me just say - i love audio books so much ! so if you are like me and kinda struggle to read, you have got to try audio books !

its not often that i share a low effort recipe as i can get a lil adventurous in the kitchen. but this week i did it — a simple recipe that has a lot of bold flavor. honestly give the credit to red miso paste.
i am drooling at the thought of this super crispy tofu cutlet SMOTHERED in buffalo sauce — and don’t worry soon this guy will be in your IG feeds.
would this be a complete weekly review without a bread post ? nope. this week i made a very plain loaf, nothin too fancy and yet a pure delight.
no buffalo saucy dish is complete without you know, ranch. i used some of the cashew sour cream I had left over from when i made that boxty last week and OOOF. i swear you could not tell this was dairy free and yeaaaah donn’t worry ill be sharing her very soon.
guess who is feelin brand new with their brand new tri-pod ? this week i recorded my first video with my camera and my iPhone and woah - it was tricky but also a fun challenge.
so we have quickly ran through the stock pile of potato pancakes which means they were a hit !! my gf really likes them because we see them as essentially another version of arepas — its just potatoes instead of corn !

The Weekly Round Up
Potato Pancakes / Boxty
if there is one thing about me is that I love all the seasonal things and making plant based versions of dishes that are traditionally not plant based - like these potato pancakes or boxty that is served around this type of year. they’re typically stuffed with cheese, pan fried till crispy and served with sour cream and chives. for this I made a simple sour cream out of soaked cashews blended with lemon juice, apple cider vinegar and salt. the potato mix is just 2 russet potatoes mixed with a generous amount of cornstarch and salt to make a pliable dough that can be stuffed with lots of cheese. violife brand is my tried and true favorite plant-based cheese and no I am not affiliated with them but ya know I am out here *manifesting* once they are stuffed I like to freeze them for maybe 20 minutes before pan frying and just like that you have a festive lil saint patricks day treat.


Brothy Chickpeas with Red Miso + Kale
now i know most of us have a lonely can of chickpeas sitting in the pantry waiting for a greater purpose and that is when its time to make comforting brothy beans. they come together pretty quickly but what I think really makes this - is the tomato paste, full fat coconut milk and red miso paste making this very creamy and full of umami flavor - and I would argue that eating it with a piece of fresh bread is essential.
