Good Morning Besties, its finally the week end and I hope you all had a good week. I’ve been cooking up a storm getting ready for the holidays and wanted to share some holiday classics to have on your holiday table. Like this very ooey gooey delicious sweet potato casserole, the non vegans wont even notice and your vegan cousin or friend will feel so touched that you remembered to include them !
As we approach the hectic holiday season, I wanted to share with you all my favorite thing. My favorite pod cast We Can Do Hard Things, the link will take you to an episode talking about holiday expectations as sometimes we spend so long preparing, trying to make everything perfect. Letting that stress take us away from enjoying the moment for what it is. This was the pod cast that made me fall in love with podcasts as they are so real and I love when people talk about real things…its so brain scratchy. I love it !
Now anyways, back to the food… I love recipes that are easy to play around with by incorporating with what you have on hand and loaf cakes are all of that. This pumpkin chocolate chip loaf can be made with all the things you probably already have in your pantry. You can also sub out the chocolate chips for nuts or do a combination of both. Its seriously so easy and the reward is so good as the house just smells like you baked fresh ginger bread cookies.

If you have never tried pumpkin and chocolate together, you need to as they really are like an elite flavor combination ! As the pumpkin and all the spices incorporate all the amazing flavors of fall and the dark chocolate chips just bring it all together to make this an amazingly decadent little loaf that has a ton of depth in flavor.

Sweet Potato Casserole
Listen, I don’t know how this isn’t considered a dessert as I have always seen it next to the green bean casserole but I am not complaining. I respect the classics and honestly there isn’t too much tweaking to take this away from a traditional sweet potato casserole. The only difference here is some vegan butter, marshmallows and oat milk. Same ole sweet potatoes, brown sugar and spices.

New Year, New Things !
Now we are implementing some new exciting things around here.
