I am back from my cruise that needed another vacation from the vacation. I came, I saw, got anxiety and was excited to be in the comfort of my home. There is really no place like home because I cant be away from my cats and there is lots of plant based food options. There are some down sides though of course like cooking, cleaning and the adulting that comes with returning to adult life. All this to say, I loved the time with the family and the opportunity to unplug but I am happy to be back to my normal routine !
This week I shared what I thought was a pretty cool whipped tofu recipe. The video didn’t do as well as I had hoped despite how aesthetically pleasing the intro was but I digress. I am still very much in the growing pains era of my content creating journey. If you saw my first cooking videos that I ever recorded and posted, you would understand just how much of a transformation has been in the works. I was also pretty stoked to share what I thought may be a controversial post as I wanted it to have pro Palestine themes intertwined within it. I have been wanting to experiment with mocktails for a hot minute now and with watermelon season coming along the opportunity to do this really just unfolded itself. One of my old class mates from school has an online business where she has been doing embroidery and makes some beautifully unique designs. Ill attach the link here if any of you happen to be interested in supporting a small business. Whipped Tofu & Jammy Tomatoes Toast
If you are nervous about trying raw tofu then allow this recipe to be the perfect beginners introduction because I also was apprehensive. I typically like my tofu firm and fried so trying it this way did feel unusual for me but now I love whipped tofu and cant wait to incorporate it with more things, like bagels !
I am also picky with how I like my tomatoes cooked but I love cherry tomatoes that have been kind of charred and then cooked down into a sort of savory jam.
All this to say, try things out side of your comfort zone ! I am so glad I did because I can never have enough breakfast toast recipes. I love this recipe because it is easy to have left overs for the week for quick easy breakfasts and its so savory that it kind of reminds me of pizza, for breakfast ! If that’s your thing .
Watermelon Lime Spritz🍉
I love watermelon juice, its so refreshing and I love it even more with a squeeze of fresh lime. This little mocktail would do so well for a summer get together and don’t be scared away due to the complex looking slanted ice effect. You can pour the juice into ice cube trays for a more approachable variation to this recipe that will still have all the wow factor to impress your guests. Don’t forget to make the very necessary sweet, salty and spicy rim on the side that has a touch of my favorite tajin !
