Toasted Tahini & Pear Breakfast Toast

I’m going on a small vacation! Finally, after months of working hard on all things content creating. From teaching myself everything from recording, editing, blogging, writing and recording voiceovers ! Its been an exciting, challenging and rewarding ride since starting my page and website. With all of that, its time for some well deserved time off. For the first time I will be scheduling this post in advance so fingers crossed it goes well ! I will be the first to tell you, I am terrible with technology but with the power of ADHD and Youtube ….almost anything is possible. I am a big believer of not waiting to be perfect at something before giving it my best shot.
In order to really unplug I wanted to have some content already ready to go so I am in a good place when I come back. So I figured this would be such a fitting time to maybe try a mini series. Most mornings I want something light that can be enjoyed along side my morning cup of coffee….or if I’m being honest its really just a cup of Bustillo espresso. Exactly what I need to wake me up for the day ahead. We all love avocado toast and I am not in any way shaming the beloved avocado toast but I would like to entertain other options. So with that I share a little series of easy breakfast toast ideas.

Banana Bread with Sticky Date & Ginger Butter
Next time you find yourself with a slow morning and not sure what to make for breakfast - I introduce you to one of my favorites. A loaf of homemade banana bread with sticky dates and ginger butter.
It starts off by measuring out the dry and wet ingredients and when I mash the bananas. I do like to keep the bananas a bit chunky because I love getting bits of banana throughout each bite. I love making quick breads because they are so easy, versatile and only take about 45 minutes in the oven which gives me time to put together the butter.
I do recommend grating some fresh ginger for this but dry/powdered ginger works fine too. I typically use 3 dates to 1 tablespoon of cold butter with a touch of cinnamon and brown sugar while mashing it with a fork. Then I let that firm up in the fridge to set before serving with a generous sprinkling of flakey salt and a big cup of coffee.
One of my favorite go to breakfast toasts that is sweet, savory and of course, plant based. This is my favorite - Toasted Tahini & Caramelized Maple Pear Toast !
To start In a warm pan, I allow one side of the bread to get golden in some vegan butter and then prepare the pear by slicing it thinly on a mandolin into some water to prevent it from browning. On the toasted side of the bread I add a generous amount of tahini before spreading out some toasted and crushed almonds on a lined sheet tray followed by some maple syrup and then for my favorite part, layering all of the slices of pear and smooshing everything down with the bread before popping it in a convection oven for 15 minutes.
Once it's done, I sprinkle over a bit of cinnamon before enjoying it with a nice cup of coffee. This is one of my favorite breakfasts for when I can't decide if I want something sweet or savory for breakfast and satisfies my cravings everytime.
