the overnight breakfast meal prep that will have you excited to wake up and have breakfast day after day. chia pudding is a serious staple in our household as it practically makes itself. so with that being said - if there is one thing I know you could make time to meal prep. it has got to be chia pudding as it literally doesn’t get any easier than that. i like to make a different flavor each week to keep it fun but this strawberry milk chia pudding is my favorite that I always go back to time and time again.
topping it with this brown butter streusel and strawberry compote kind of turns it into a sweet treat that tastes like strawberry shortcake. making it perfect for breakfast or for when I want something sweet but don’t wanna do anything to involved.
Strawberry Milk Chia Pudding
makes approx. 1 quart of chia pudding and the prep takes 5 - 10 min and it sets overnight 6-8 hours
Ingredients
1/2 cup - chia seeds
2 cups - almond milk
1 1/2 cups - canned coconut cream
2 tbsp - maple syrup
2 tsp - vanilla extract
1/4 tsp - salt
6 strawberries
Strawberry Jam
1 container or 1 pound of strawberries thoroughly washed
2 tbsp - vegan butter
1/4 cup - lemon juice
1/4 cup - brown sugar
1 tbsp - corn starch mixed with 1/4 cup cold water
Streusel
1 cup - flour
1/2 cup - oats
3/4 cup - brown sugar
6 tbsp - cold butter
1/4 cup - chilled brown butter
1 tsp - cinnamon
1/4 tsp - salt

Blender / Nutribullet
A Whisk
Measuring Cups + Spoons
Chef Knife
Sheet Tray + Parchment Paper ( For The Streusel )
Pot + Rubber Spatula ( For The Compote )

I love this recipe cause it is so versatile and I recommend playing around with the recipe, maybe using other fruits.
I have played around with this recipe trying new flavors and done different versions of this with matcha powder, and trying it with chocolate or vanilla protein powder. It always tastes amazing and really makes for an easy breakfast on the go.
Instructions

Step 1 - Prep your chia pudding
There is nothing worse than going to make something and realizing you don’t have the stuff ! Take this moment to gather everything.
Mix all your chia seed pudding ingredients together. I used a Nutribullet to blend the strawberries into the almond milk and then whisked everything together and let it set in a container over night. In the morning upon checking on your chia seed pudding give it another good whisk.
Step 2 - Making the strawberry jam
To make your jam, sauté your strawberries in vegan butter and cook till softened. Once soft add in your lemon juice and allow to cook down a few more min. Add in your brown sugar and stir on low to medium heat to thicken. Lastly whisk in your cornstarch slurry and allow to set on the lowest heat stirring till desired texture. Pour into a dish or mason jar to reserve to use later.
Step 3 - Making the streusel
To make streusel, add in all your dry ingredients to a bowl and with your hands, squish the butter into the flour to make a crumbly mixture till well combined. Lastly pour your browned butter and mix well. Transfer to a sheet tray or baking dish and bake for 10-20 min checking on it periodically and stirring here and there to allow it to golden evenly till golden brown. Then set aside to cool.
Step 4 - Assemble the chia jars
Time to assemble your masterpiece. Get as fancy or rustic as you would like layering your chia pudding and jam and topping off with your streusel and fresh fruits of your choice. Save in a food safe air tight container for up to 7 days.
