Welcome back to my new series called Flavors of Spain !


Where I create plant-based versions of famous Spanish foods inspired by my trip last year. Shishito peppers were one of the plant-based dishes that I could find almost everywhere. These are sauteed in some plant based butter that’s mixed with red miso along with some sliced onions because sauteed onions make everything better. To top it is essential to season with only the best - Malden flakey salt and a generous amount of lemon zest.
What you will need:
Sharp chef knife
Small sauté pan
Cutting board
Micro plane / zester
Red Miso Shishito Peppers
Ingredients
yields 1 - 2 servings
2 tbsp - plant-based butter
1 tbsp - red miso paste
1/2 cup - sliced yellow onion
8 oz - shishito peppers
1/4 cup - lemon juice
1 tsp - Malden salt
1/2 tbsp - lemon zest
* a pinch of freshly cracked black pepper *
Instructions
Step 1 - Prep
There is nothing worse than going to make something and realizing you don’t have the stuff ! Take this moment to gather everything and wash the peppers.
You can melt the butter and mix in the miso or have fun smoothening out the butter and mashing it into the miso using a fork like I did in the video which was honestly more for the aesthetics but either way works fine. The last bit of prep is to simply slice the onion, I used half an onion for this recipe. Once that’s done just set to the side.
Step 2 - Sauté
In a warm sauté pan, melt the miso butter and saute the onions till soft and then add in the shishito peppers and give it all a good toss to combine. Let the peppers blister a bit and give a light sprinkling of salt and freshly cracked black pepper. Once the peppers have gotten some color, deglaze the pan with a bit of fresh lemon juice and toss well to combine everything before taking it off the heat.
Step 3 - Plating
To plate, grab your serving dish or plate and pile the peppers in the center before garnishing with some fresh lemon zest and flakey salt.
