This week feels crispy. Like a golden crispy grilled cheese. I was excited for this weeks recipes and videos because I had been teasing with the kimchi grilled cheese for a minute but I was even more thrilled to share the rice paper dumplings.
Wait until you guys see what I have in store for August! Lots of vibrant fresh salads. Some savory and some sweet. Maybe even some with fruit in it…scary I know.
There may also be a mini series in the works for some easy morning breakfast recipes. I am already thinking about fall recipes because this is my favorite time of the year. I cant wait to start pumpkin season early and drag it on for as long as I can. However I am not looking forward to it getting dark outside earlier but at least that does bring us cooler weather.
The Weekly Round-Up!
Making an amazing vegan grilled cheese may sound like a daunting task but with a nice vegan cheese, a solid non-stick pan with a lid and some steam. It comes together very easily. Once I learned this hack I never had a difficult time getting vegan cheese to melt. It just needs some moisture to help it along. For this I like to use a squeeze bottle filled with water but you could use what ever you happen to have at home. If you have never tried adding kimchi in your grilled cheese…..thank me later.
My favorite brands of vegan cheese are Violife and Miyoko’s as in my honest opinion are really just the best. They melt so nicely and even have a nice stretch to them as well as a nice flavor variety.
Rice Paper Dumplings & Peanut Sauce
If any of you guys happen to be like me and always have some veggies in the fridge looking for a home this recipe is perfect. I like to make these when I have a couple stalks from broccoli or cauliflower. Even left over cabbage, kale or spinach is so good in these too. I like to press and shred the tofu and process as much veg in the food processor as I can except for maybe the diced onion. But this is a super creative, fun and resourceful recipe so I highly encourage folks to give this a try !
