My All Time Favorite, Pumpkin Spice Tres Leches & Calabaza en Tacha

First things first, this week has been a week and a half ! I am still trying to navigate my feelings with it all. I am sure we all are up to date on the American election results and I can’t say that I am surprised but I was holding on to hope that things would have ended up differently. Now I know my audience is not very big and I know I am guaranteed to have people with differing views but none the less the results hurt but I am trying to hold on to hope.
I believe open conversation is the only way forward to a hopefully less divided country and that is going to take some time. So in the mean time , especially right before the holidays all we can do is hone in and be precious with our energy because seriously the holidays are right around the corner. So with all that being said, lets get into all this weeks goodness.
If you have been paying attention to my posts on Instagram or on my socials you may have noticed that I have gone a bit crazy with all the pumpkin and squash recipes. In my defense, I practically missed the first 2 weeks of October because I was in Spain and I was actually nervous about missing pumpkin season. So upon coming back it was time to crank out all the pumpkin recipes I had flooded in my mind and every year without a doubt - I have to make this Pumpkin Spice Tres Leches. Its my favorite thing ever as its just so perfect, the way the cake just soaks up the pumpkin spice milk is just beautiful. Especially serving it at family get togethers - be prepared because its going to be requested every year. Tres Leches is a traditional Mexican dessert that is made of heavy cream, condensed milk and evaporated milk. Lucky for us, we can still make a pretty traditional Tres leches with coconut based evaporated and condensed milk. What really makes this recipe in particular so special is the pumpkin spice elements like the caramel that is made with piloncillo, a Mexican raw sugar that makes the best caramel sauces and pumpkin puree along with all the fall spices.

Pumpkin Spice Tres Leches
A spongy pumpkin spice cake, soaked with a milk syrup that has oat milk along with coconut condensed and evaporated milk. The milk syrup also has some of the caramel sauce mixed in for extra fall spice goodness and of course the other star of the dish the pumpkin spice caramel sauce. This stuff is so good, even just on a spoon is enough of a little treat. To make this decadent caramel sauce I used piloncillo, which is a Mexican form of raw brown sugar that is perfect for this recipe and don’t worry its easy to find at more grocery stores ! Calabaza en Tacha
Calabaza en Tacha is one of my favorite Mexican classics that is eaten around this time of year in honor of Dia de los Muertos and surprise - it's traditionally made vegan ! It's essentially candied pumpkin and can be eaten hot or cold. When it's warm I love it with ice cream but if enjoying it cold I love it with a splash of oat milk. But which ever way you choose to enjoy it I know you will love it ! I put the link for each recipe in the title that way it makes for a shorter and easier to read newsletter <3

New Year, New Things !
Now we are implementing some new exciting things around here. Pumpkin Chocolate Chip Loaf Cake
If you are new to baking, this warm pumpkin chocolate chip recipe is for you! Quick breads are, in my opinion, one of the easiest ways to practice one's baking skills as there is no yeast that needs activating, no kneading required and can be done in less than 2 hours !
I love recipes that are easy to play around with by incorporating with what you have on hand and this recipe is all of that as it can be made with all the things you probably already have in your pantry.
If you have never tried pumpkin and chocolate together, you need to as they really are like an elite flavor combination ! As the pumpkin and all the spices incorporate all the amazing flavors of fall and the dark chocolate chips just bring it all together to make this an amazingly decadent little loaf that has a ton of depth in flavor.
