With all these fun recipes I feel like its my second birthday week. Last week I made flancocho and queso fundido which are some of my favorites and then this week with the hidden veggie mac n cheese and strawberry horchata. This has been a pretty fun 2 weeks with all the good food.
The hidden veggie mac n cheese is always so comforting. I love making it no matter what season it is but it does always make for fall gatherings with family and friends. You can even use pumpkin instead of sweet potato too for a little bit of a different flavor. I have made vegan horchata before but the strawberry puree was a new twist and I cant wait to try this with matcha or even with coffee.
The weekly round-up
Clearly I take my Mac N Cheese pretty seriously considering I now have 3 recipes which may seem unnecessary. However I beg to differ. I love all 3 of my children equally in different ways. I love how creamy, nutty, savory and slightly sweet this one is and I made a big enough batch to have left overs.
Sometimes I am craving a Classic Mac N Cheese. Other times I am really craving Buffalo Mac N Cheese and lately I really been craving this Hidden Veggie Mac. It is similar to the classic but has an essence of roasted veg and the texture is a bit more hearty due to the blended sweet potato. Which ever one you choose there really is no going wrong.
Growing up I always thought horchata was Mexican however I have come to learn that there is actually different kinds of horchata. The version I grew up with is made from rice and typically has a lot of condensed milk and evaporated milk. For this recipe I like to use coconut condensed and evaporated milk. It tastes just as good, if not a little better and is much easier on the stomach. In spirit of my birthday month I really felt like making something nostalgic like this strawberry horchata.
Interestingly enough in Spain it is made with tiger nuts and is served hot or cold. In some places in Spain and Portugal they use jicaro, sesame seeds and other spices so it is really interesting how depending where you are you may have a different horchata.
