This past week or so I have categorized in my mind as my personal golden era as I have kind of fixated on turmeric-powered foods. From my liquid gold salad dressing loaded with ginger and this new golden carrot curry. I love foods that make me feel good after eating them which is what inspired me to share these recipes. Curry is one of my favorite meals as its great on a good day and what always brings me back on a bad day. I had a decent amount of carrots that if not used would have gone bad and so with that the golden carrot curry was born.
With my birthday being a month away I have started to plan content for May and I’ve decided the theme is going to be all my favorite things I like to make for myself. This includes my favorite queso fundido recipe that is so good with fresh tortilla chips. I’ve shared this recipe before so I will put the recipe down below. I get this vegan chorizo from Trader Joe’s and it really tied everything in together. It’s a dish that you may want to enjoy on your own and savor each bite.
Feeds 4
Ingredients- for cheese sauce
1 cup cashews, soaked
1 can, full fat coconut milk
2 cups warm veg stock
1/4 cup fresh lemon juice
1/4 cup nutritional yeast
1 tbsp tapioca starch mixed with 3 tbsp cold water
1 tbsp sea salt
Other Ingredients
Fresh tortilla chips
1 jalapeno for garnish
vegan chorizo, I got mine from Trader Joes ( optional )
Instructions
Step 1
You can soak your cashews over night or boil them to achieve the softness we are looking for. Once they have doubled in side and are soft you’re good to go, the last thing you want is a gritty “cheese” sauce with chunks of cashew.
Step 2
In a blender, blend together your soaked cashews and coconut milk.
Step 3
In a sauce pan, gently heat up your thick paste from your blender and loosen it up with some of your warm vegetable stock. Add in your lemon juice, tapioca slurry and sea salt.
Step 4
You may notice the sauce starts to quickly thicken and that is because of our tapioca slurry. Tapioca flour helps sauces like these develop a nice stretchy texture so with a whisk you may have to go back and forth between adding some stock and mixing it in until you get the thickness you like.
Step 5
Once your sauce is perfectly thick and seasoned to your liking, pour it into a bowl and garnish with some sliced jalapenos, plant-based chorizo and enjoy with warm tortilla chips as a great appetizer or snack.
Now for what we have all been waiting for. The golden curry made from roasted carrots, onions, coconut milk, ginger, garlic, finished with sesame oil. Its a hug in your stomach as the curried chickpeas are also another highlight of this dish.
