This is where I will be creating my take on Spanish classics with plant-based ingredients all in inspiration from my travels around Spain in 2024 !

This Weeks Review
On Wednesday I posted the first recipe for Flavors of Spain which was this Non-Alcoholic Sangria - which I will say is right on time for dry January !
This was a peak moment of my time in Madrid ( when I finally found my first all vegan restaurant ! ). I also shared this photo in my January Intentions post which is a relatively new thing I been doing on IG to start the month intentionally and share where I am at with those who follow me <3
So in my previous Newsletters I have shown photos of Salem and it now time for you all to meet my more introverted cat - Tofu. She’s sweet, pure and full of love and after months of dedication she is finally learning to relax and just be as I rescued her as a stray.
A sneaky lil peaky on next weeks post shishito peppers - these guys are literally finger licking good as they are cooked in a red miso butter !
Listen I am an intentional ass person and I sometimes need to read or hear something a couple times to really marinate in it so when I share intentions just know its as much as a reminder for myself as it is for all of you. In 2025 we are going to pause and enjoy where we are right now. We can’t enjoy the moments of our life if we are always looking for more missing what is right in front of us. Just remember that years ago we were probably yearning for things we have right now.
Lastly, I love me a good lil trip around the local thrift stores and record shops. Its very nostalgic as it really is my favorite thing to do with a cup of coffee and do a bit of sensory seeking while perusing through forgotten treasures.

Non-Alcoholic Sangria
If you have never tried sangria take this as your sign that its time. You could choose to do this with red wine if that’s your jam - I will say I was worried that using grape juice instead of red wine was going to make it taste too different or less authentic but I kid you not after taking a sip I was shocked by how much it tasted to the real deal version I had in Spain. I will say I think the key is getting your hands on a good quality grape juice. There are also some non-alcoholic red wines on the market and I was close to using one for this recipe but after reading some reviews I gathered that using a good quality grape juice that isn’t from a concentrate may actually be better and I think it was. Another added bonus is that after sipping on the sangria, you also have a little snack with the fruits that have been mingling in the delicious mix of juices at the bottom. It also looks beautiful in a pitcher making it the perfect mocktail for hosting too !
