Good Mornings friends, I am here for our routine morning lil chat with of course my trusty cup of espresso. Bundled up in sweaters and blankets because its cold here in Florida, and us Floridians don’t know how to act when its below 70 degrees. Luckily I have got just the thing to keep you all warm n toasty this week end. This week was a low n slow week on the social medias but ya know, ya win some, ya lose some.

Now for some important news - we officially have a solid plant-based creme brulé ! Don’t ask me why but I felt compelled to marry this idea with sweet potato pie and do a cinnamoney streusel on top. Needless to say, it was out of this world amazing. You will be happy to hear that it was also so easy ! Definitely a great dessert that can be prepared before hand and shown off to your guests to look like the host with the most.

What I made this week !

Peanut Butter Pumpkin Udon Noodles

It's comforting, warm and even has a bit of brightness from the lime juice and only takes 20 minutes to make ! This recipe was also a lil collaboration from Peanut Butter & Co as they generously sent me a box of 4 different peanut butters to try. For this I used their Smooth Operator Peanut Butter along with a roasted pumpkin puree to make this delicious flavor combination.

Sweet Potato Creme Brulé

Imagine creme brulé and sweet potato pie married together for a match made in heaven. The mouth feel is so smooth from the sweet potato custard but then crunchy from the bruleed and caramelized sugar on top. Taking a perfect bite with the right amount of custard and streusel makes you wanna lick the ramekin clean when no one is watching - no judgement here. Click the link below to check out the video !

Recipe Shout Out

If Creme Brule isn’t your thing I wanted to share a slightly older recipe, why ? Because its that good ! I want to give space for older recipes to kinda come back to the surface for air so they are not lost or forgotten. Especially now that we are enjoying the holiday season - making some sheet tray granola is a perfect family friendly recipe to get your hands a little dirty together in the kitchen. I don’t know about you guys but sauteed apples with cinnamon over ice cream is giving a sort of Christmassy vibe.

Why Make Your Own Spice Blend ?

  • A homemade spice blend delivers deeper flavor and its customizable to your own preferences.

  • Toasting the spices, before grinding them and frying them in the roux, develops their flavors and infuses them throughout the entirety of the dish .

Curry Spice Blend

2 tbsp - whole coriander seeds

1 tbsp - whole cumin seeds

1 tbsp - fenugreek seeds

2 tsp - cardamom seeds

1 tsp - black peppercorns

1/2 tsp - fennel seeds

3g - cinnamon stick ( about one, two inch stick of cinnamon )

2 - cloves

1/2 - of a star anise pod

1g - dehydrated orange peel

2 tbsp - ground turmeric

1/2 tsp - Chile powder

Instructions - Spice Blend

  1. Toast the Spices

    In a small pan or pot, add in all the spices listed above and allow them to get warm and toast a bit to help bring out their natural flavors.

  2. Blend the Spices

    After the spices have been toasted, grind all these spices in a spice grinder, coffee bean grinder and or a Vitamix blender. Once all the spices have been grinded to a powder empty into a small bowl and set to the side to use later.
