This is my go-to, quick to put together crowd pleaser.
I have been so excited to finally post this video as it has been so highly requested since seeing it in my intro to 2024 video. A really good vodka pasta was something I was missing for a while till I realized some time ago that full-fat canned coconut milk is the best heavy cream replacer. Since then I have used it to make bechamel, alfredo, tres leches, and a lot of recipes that are traditionally made with heavy cream.
Now for this weeks round up
This week I was recording nearly everyday, 5 days in a row with today editing 4 videos. Needless to say I am wiped out. Luckily all this work has allowed me to produce more content for social media and I was able to shoot 2 recipes that will be going in the E-book I been talking about on my Instagram story. I think you guys will be really impressed with that I have planned for Valentines Day.
First thing I’m excited to share its the Strawberry Chia Pudding with streusel. When making this 7-Day Beginner Plant-Based Meal Plan, I wanted to make recipes that are easy to make and don’t take too much time. I love chia pudding cause you can really do any flavor you want and can even add in protein powder. Once I finished recording and taking a million photos I was really pleased how it came out once I finally got to try the finished product.
The second recipe I was able to finalize this week was the Carrot Cake Oats Bake. I loved how this came out as it was kinda a crazy idea to combine oatmeal and carrot cake but that’s the fun of experimenting in the kitchen. I love pineapple in carrot cake so the pineapple frosting really made it for me. The other great thing is that it is baked in the oven in an 8x8 pan giving us 9 pieces and they can be frozen so this is definitely a meal prep staple.
If I had to choose a savory breakfast or a sweet one, most days I would lean towards a savory breakfast but I am all about having options. Another thing is I love meals that have a variety of flavors, colors and textures…its an ADHD thing. The oats, the carrots, pineapple, raisins and pecans. This is perfect for a quick breakfast that will have you excited about making time for breakfast tomorrow morning.
Now for the main event
I hope you guys make this and let me know how it went for you at home. Every time I make this for friends and family they are always pleased. I love recipes like this one cause it isn’t expensive or time consuming and practically comes together in one pot. If you wanna be fancy and use cavatappi pasta than all the power to you however you can do this with linguini or whatever you have at home. The magic is in the sauce.
