i love just about anything orange cranberry flavored as I think the two are like a match made in heaven.


you can use fresh or dried cranberries as honestly there is not a huge difference in the final result. Its really all in the orange zest and spices. i love to sauté the cranberries in butter, freshly squeezed orange juice, orange zest, maple syrup and some fresh rosemary.
Orange Cranberry Spice Waffles
yields 4 waffles that are 9”
Ingredients - Batter
2 cups - all purpose flour
3 tbsp - white sugar ( I recommend Zulka sugar )
1 tbsp - baking powder
1/4 tsp - pinch of salt
½ tsp - cinnamon
½ tsp - cardamom
1 1/2 cups - cranberries ( dried or fresh )
2 cups - almond milk
1/4 cup - melted butter or oil
1/4 cup - apple sauce
1/4 cup - orange juice
1 tbsp - orange zest
Ingredients - Cranberry Rosemary Syrup
2 tbsp - vegan butter
1 1/2 cup - fresh cranberries
1/4 tsp - cinnamon
2 sprigs - fresh rosemary
1/4 cup - orange juice
1 cup - maple syrup
* pinch of salt to taste *
What you will need:
A Waffle Maker ( mine made waffles that were 9 inches in diameter for reference )
Large Mixing Bowl

A Medium to Large Sized Sauté Pan
Instructions
Step 1 - Make the cranberry syrup sauce
In a warm sauté pan, add in the butter and sauté the cranberries for a couple minutes till they start to soften a bit. Add in cinnamon and rosemary and with the spatula give this a good toss around for maybe 2 minutes to allow everything to mingle around but not burn at the bottom of the pan. Pour in the orange juice and let all of this simmer for a couple minutes letting the cranberries almost poach in the juice while the rosemary releases its flavors. Lastly, bring down the heat to very low and take out the rosemary. Stir in the maple syrup and let all of this integrate and mingle over the low heat. After this step the sauce is pretty much done so just set it to the side till plating or serving time.
Step 2 - Make the batter
In a large bowl add in the flour, sugar, baking powder, cinnamon, cardamom, salt, orange zest, milk, apple sauce, butter, orange juice, and cranberries. Whisk gently to combine but not to over mix. I like to add all the dry ingredients to the bowl first, give it a whisk and then pour over the wet ingredients along with the cranberries to do a gentle mix with everything combined.
Step 3 - Make the waffles !
Time to pre-heat that waffle iron, mine really only has one setting at 400 degrees Fahrenheit and they cook in about 4 minutes. I recommend using a ladle or portioning scoop to get even amounts of batter each time. Once they are done they are basically ready to garnish with butter and syrup before digging in.
However, if you are making this for a lot of people you can make all the waffles and lay them on a sheet pan and keep them warm in the oven. This is also great if you wanna set the table and serve these buffet style. The options are endless and its all up to you !
Step 4 - Plating
Slather on your favorite plant based butter and spoon over the cranberry sauce and or some extra regular maple syrup. Any extra waffles can be frozen and then thawed and eaten later. Save the left overs in a food safe, air tight container and store in the fridge for up to 5 days or 1 month in the freezer.
