Happy Friday ! I know you all are not used to hearing from me on Friday’s but honestly this may just work better with my recording schedule.
This week I may have over done it just a tad with hosting a dinner party gig this week that took a lot of time and energy. The video I recorded I wasn’t very happy with how it came out and I don’t like putting out something I don’t feel confident about. Just know that a Sticky Orange Tofu is in the works and a Creamy Peanut Noodle Bowl. Does this mean we are getting one recipe this week ? Yes, but its a killer recipe.
Remember when I mentioned last week that waffles are my favorite ? This week its time to bring back an oldie but a goodie. My orange cranberry waffles were one of my most successful recipes in 2022 and again in 2023 so why not introduce her to my growing newsletter. You can use fresh or dried cranberries as honestly there is not a huge difference in the final result. Its really all in the orange zest and spices. I love to sauté the cranberries in butter, freshly squeezed orange juice and some zest, brown sugar and yes, a sprig of sage.
I love just about anything orange cranberry flavored as I think the two are like a match made in heaven. I think the first orange cranberry thing I ever tried was a muffin with a rememberable brown sugar crumb topping. Growing up every time I tried a new flavor combination it gave me a rush of excitement to see how far that could take me. How many other amazing combinations could there be ? Food has always been a hyper fixation of mine and I really could go on forever talking about anything food, cooking, baking or ingredient related. So if you are crazy about food and eating like me then you are in the right place.
Orange Cranberry Spice Waffles
Makes about 4 individual 6" waffles *
Ingredients / Batter
2 cups flour
3 Tbsp sugar
1 Tbsp baking powder
2 cups almond milk
1/4 cup apple sauce
pinch salt
½ tsp cinnamon
½ tsp cardamom
½ cup dried cranberries or fresh
1 orange, zested and its juice
Instructions
Measure out your dry and wet ingredients in separate bowls.
Whisk together the dry and wet ingredients to make your batter.
The weekly round-up
This week was wild. I learned my lesson and am taking notes for next time. Hosting dinner parties as a private chef is tough work and my social battery was depleted by the end of that day. It quite literally took me 2 days to recover my sensitive brain and decide to take a pause to hone in and refocus on the tasks at hand. I also had my finals this week soooo…I definitely should have anticipated that crash. That being said I decided to literally throw away days of work and rerecord recipes to ensure they can do their best.
I invested a bit in some new equipment and I honestly think its going to make a big difference in my newer videos. So keep an eye out for when I post the Sticky Orange Tofu and a Creamy Spicy Noodle Bowl.
