Good Morning from me and my *hot* espresso with a *sploosh* of vanilla almond milk. I would say its sweater weather except I live in Florida and there is kinda some crazy weather going on, I hope everyone is staying safe and is doing well !
This newsletter along with the next 2 may be a tad on the shorter side. I may or may not be taking a little fancy shmancy trip to Spain…. be prepared for lots of Spain content ! I had to really push to get all these recipes tested, recorded, typed up and scheduled all before packing my bag. Finally the crunch time is over and I cant wait to * get inspired *. But back to the food because these scones deserve all the attention. If you have been following along with me for a while you may have noticed I like to make cranberry orange everything as it is one of my all time favorite flavor combinations. I still dream of these cranberry orange waffles that I shared so long ago that I have been waiting to revamp and share again because they were just truly something special.
The Weekly Round Up
Cardamom Cranberry Orange Scones
Adding zest to sugar is such an easy yet impactful way to elevate such a simple treat whether its a scone or a muffin. The orange zest on top and throughout really does a lot to push that orange flavor since cranberry’s really have such a bold and tart flavor profile. In the mornings I love a little breakfast pastry and this one certainly did not disappoint. If you plan on hosting the holidays, you may wanna save this recipe for later !
Arepas & Sautéed Cherry Tomatoes with Avocado
Arepas are cornmeal cakes that originated hundreds of years ago in a region that now makes up Colombia, Venezuela, and Panama. They can be grilled, baked, fried and stuffed leaving us with never ending flavor combinations and possibilities. Arepas are literally perfect for any meal of the day, even breakfast. I love to incorporate vegan cheese into the dough sometimes and make a big batch to freeze for the perfect grab and go breakfast.
Venezuelan arepas tend to be smaller and thicker, while Colombian arepas tend to be sweeter, thinner, and stuffed with cheese. No matter where they come from, I have love for all of them because who could just choose one ?
I hope this recipe will make it into a few of your kitchens and if you give it a try - please do let me know how it went !
