For my Birthday week it only felt fitting that I do something a little different since lately my videos have been more centered around the meal planning and recipe testing. I have been wanting to make a vegan flancocho and after a couple attempts I finally got a solid recipe to share with you all. Its essentially caramel and flan on top of chocolate cake and it is sometimes called chocoflan.
Before this I had never had a vegan one so I was so happy that it came out better than anticipated and tasted like the real deal. This is a Puerto Rican classic that I cant wait to show off at parties because no one is going to believe that it’s vegan.
To make this you will need a special baking Bundt pan to achieve the flancocho signature look. If you are planning to make this - fair warning you may want to plan ahead because this one takes a while as it needs to set overnight.

The weekly round-up
Flancocho - My pride and joy this week and also the cause of a headache. Getting the texture of the flan right, took more than one or two tries. Typically if I were to make individual flans the agar and thickeners overall arn’t really a challenge but for a cake this big and then add on a chocolate cake ….it required some patience.
Queso Fundido - Vegano - I never thought I would be making a queso fundido inspired dip out of cashews and beans but here we are. Growing up queso fundido with chorizo and fresh tortillas was one of my all time favorites. Honestly anything with chorizo and cheese - I was there. I cringe when I look back and remember that I used to say I could never give up cheese and would never go vegan and here I am making cashew cheese beans dips.
Queso Fundido is a Mexican classic that consists of melted cheese and spicy chorizo on top enjoyed with fresh warm tortillas or chips.
Something unique to plant-based cooking that I love is that I can eat whatever I want and not feel bad about it. If I were to eat a traditional non vegan queso fundido I would be done for, I would feel terrible after and probably break out in hives and probably get a few pimples. By making a plant-based version I can indulge while sneaking in some protein. The box of chorizo has 15g of protein on its own plus about 10g for the can of beans.
