Chipotle Cauliflower Tacos & Burnt Cinnamon Maple Nut Butter On Toast
A simple breakfast idea and a pretty amazing lunch or dinner option !
This week I planned all the recipes I plan to do all the way through October because if I don’t plan ahead. Halloween will be here in a blink of an eye and I am looking for every opportunity to make all the pumpkin spice flavored things…including cinnamon rolls which I cant even wait for. Its moments like this I am so grateful that I am not allergic to gluten because I would be very sad without warm, fluffy and gooey cinnamon rolls or fresh bread.
Anyway….back to all things exciting from this week ! I shared a recipe for a delicious nut butter that I have been enjoying just about every morning. Its pretty unique because it is made with a blend of peanuts, cashews and pecans that are blended with brown sugar, coconut oil and caramelized maple syrup.

Chipotle Cauliflower Tacos
The tacos are definitely going to have to be made more often because its been too long since I have made this marinade and paired it with cauliflower. What’s even better is there is no deep frying necessary as these come together in the air fryer. What really makes the dish I think are the fresh tortillas topped with a fresh and creamy guacamole crema sort of situation. These were hands down 10 out of 10 delicious as they are just bursting with flavor.
Burnt Cinnamon Maple Nut Butter on Toast
Most mornings I am looking for a simple quick and easy breakfast to go along side my coffee and this works every time as its not too sweet. If its the week end, then I like to indulge myself with a full on tofu scramble breakfast platter. As I mentioned before, this isn’t your ordinary peanut butter. This is a blend of roasted peanuts, cashews and pecans. The cashews give it such a creamy texture, the pecans add an elevated deep flavor and of course peanuts are just classic. What steps up the flavor another notch is the burnt cinnamon that is infused with the caramelized maple syrup. I also like to garnish this with a touch of flakey salt to really bring it all together. Nothing beats this on a slice of warm toast.
