Good morning friends, how are we ? I hope we have all had a splendid holiday whether it was a small or large gathering its all about quality over quantity. This year we actually happened to have a larger get together which was nice for my partners and my family to come together and mingle around the holiday festivities.
Its been a week and a half so we are gonna keep it short. This week was honestly a week and a half for me * story time * I had an MRI early in the week before Christmas and a couple days later on the 23rd I got a call from my doctor casually telling me to check myself into the ER - I know, don’t even get me started… I had some swelling in my brain so that was very cool and festive to ponder over the holidays. So with that festive news I decided to hold off and take myself to the ER on the 26th. After staying the night and getting a second MRI with contrast this time and seeing a neurologist I can confirm that I am okay ! Long story short they found that the ventricles in my brain are larger than what is considered “normal” and the worry with this is that this can sometimes indicate ones brain swelling and putting pressure on the eyes. Causing a host of not so great symptoms and complications. Luckily for myself and others this can actually just be normal for us to have ventricles that are larger than what is considered “normal”. Its also possible I may have been born this way and we just happened to notice now. So yay for that being all sorted and even bigger yay for the fact I was able to skip getting a spinal tap or even scarier…a stent in my brain because omfg. I am such a baby with stuff like this - like it was an actual Christmas miracle that I was relaxed enough to let them give me an IV ( I know lol 😂!!!).
SO - with all that being said I am a little behind and didn’t get to post on Friday which I was kinda excited for as I was planning to share a festive mocktail in time for New Years. I will be playin catch up this week end to get that out in time before New Years so keep an eye out for that. I am pretty stocked to share it as it has a margarita vibe with a tequila alternative from Ritual, a brand that makes liquor alternatives that contain no actual alcohol but has all the essence and flavor.

Chai Horchata - its what’s been keeping me sane this week and lemme tell you it makes for a great coffee creamer omg.
Sneaky peaky at my first mocktail with a zero proof liquor alternative and it was soo fun to play around with and was very tasty. Perfect for my babes who don’t drink or looking to cut back on their alcohol intake ;)
My welcome home selfie snuggled up in this amazing sweater hoodie my partner got for Christmas that I have been testing out ( lol 😂).
The super zesty lil New Years mocktail with fresh orange and pomegranate juice, tequila alternative from Ritual topped off with ginger beer and a super yummy sugary, spicy and salty rim.
In case you missed it - MY FIRST E-BOOK WENT LIVE THIS WEEK !!! This is my first e-book and man o man, it was quite the learning curb. Now that the growing pains are out of the way I feel warmed up and excited to make more !!

Chai Horchata
Horchata is a Mexican classic I grew up with and as much as I loved it - it really had my stomach in knots with all the heavy cream and condensed milk. Luckily for us its actually pretty easy to make a plant-based version that isn’t skimping out on flavor or mouthfeel. The base of Horchata is actually rice milk so to bring it all together you will need a can of coconut evaporated milk and condensed milk. It is actually very easy to make - the weirdest part is blending the rice as that just feels weird to do. Another great thing is that is tastes better the next day as its had more time to let all those flavors really mingle.
