

Cashew Based Sour Cream
yields 1 cup / prep time is 5 min
Ingredients
3/4 cup - soaked cashews
1/4 cup - filtered water
1 tsp - apple cider vinegar
1/4 tsp - salt
What you will need:
a high speed blender than can blend nuts well ( like a Vitamix or Nutribullet )
Instructions
Blend
Add your soaked cashews, lemon juice, apple cider vinegar and salt to a blender and blend for maybe 2 - 3 minutes till smooth. Pour into a food safe container and pop into the fridge to chill before using.
Left overs
Save any left overs in the fridge for up to 7 days.
