I am so excited to be writing this weeks newsletter as it has really grown over the last 2 weeks ! It makes me so happy to see that people actually subscribe, open and read my emails. It really just warms my heart to see that all the seeds I have planted over the past few months are starting to show some signs of growth.
I’ve been trying to find a new pace since starting back up on my personal Instagram account now and its been a lot. Posting 2 recipes a week and also trying to stay on to of developing content for my personal page. I have been sharing a bit about my neurodivergence journey which has been liberating and anxiety inducing all at the same time. Nonetheless I am proud of myself for speaking my truth and taking up space.
Now back to the food. I am starting to roughly plan out Augusts recipes partially due to the fact I am going on a cruise and I know I wont be able to enjoy it if I have unresolved work stuff to do. With that being said, Id love some recipe suggestions. I always like to center my recipes around what is in season so I am ruminating on what avenues I could go down with corn, blueberries and maybe brussels sprouts ? Not all together of course…but you never know.
The Weekly Round-Up
Like a lot of yummy things, once something has been battered and fried to a golden brown we have all become suddenly more interested. Call these guys whatever you want but these buffalo cauliflower wings are a classic at every summer get together and always ends up making someone a believer that plant based versions can be just as good as the real thing !
I know right now most are too busy looking for a guy in finance, with a trust fund, thick thighs, blue eyes… But I'm always looking for something that can be made in under 30 minutes that I don't have to think about and that viral marry me chicken recipe is exactly that.
If you don't know what I am talking about - don't worry I got you. A while back a guy shared a recipe for his Marry Me Chicken that was the dish that made his wife realize he was marriage material. Naturally I had to see what all the hullabaloo was all about and I'm here to report that it is indeed - fire.
Of course I had to make some tweaks and veganize it. I also added orzo because what better way to enjoy the amazing sun dried tomato sauce without something to soak up all those flavors. This is one of those recipes that is so good to have in your memory because it doesn’t take a lot of prep, is pretty budget friendly and tastes like something from a restaurant.
