So about 6 months ago I saw this recipe shared by the New York Times cooking page created by Eric Joonho for a black sesame rice krispies treat and I am not even kidding - it has been living rent free in my mind ever since so today was the day I decided to have a go at making a plant-based version !


These started similarly by browning some vegan butter along with sesame seeds. Before adding in the marshmallows and a touch of toasted sesame oil. To bring out a nutty umami flavor to balance out the sweetness from the marshmallows and because I can’t follow instructions I decided to do a mix of both crispy rice cereal and corn flakes. They took 10 minutes to make which is more time that it took for all of them to be devoured - they soft and gooey while also having a nice crunch. Eating them as cereal was also so fun - highly recommend !

I love this recipe cause it is so versatile and I recommend playing around with the recipe, maybe using different cereals or different additions to switch it up.
What you will need:
8 x 8 Square Baking Pan
Sauté Pan + Rubber Spatula
Black Sesame Marshmallow Cereal Crispies
makes approximately 9 marshmallow treats / prep time 10 minutes
Ingredients
1/4 cup - plant-based butter
1/4 cup - black sesame seeds
10 oz - plant-based marshmallows
1 tbsp - toasted sesame oil
2 cups - crispy rice cereal
2 cups - corn flakes
1/4 cup - sugar
1 tsp - salt
Instructions
Step 1 - Melt the butter + grease the baking pan
There is nothing worse than going to make something and realizing you don’t have the stuff ! Take this moment to gather everything.
Note: This recipe is a bit time sensitive because you have to move quickly with the marshmallows and cereal so having everything measured out before hand is ideal.
With some sesame oil or melted butter grease the baking pan and set it to the side. In a pan, on medium to low heat melt the vegan butter and allow it to brown before tossing in the black sesame seeds. Once the butter has browned, toss in the seeds around to get warm and toasty.
Step 2 - Add in the marshmallows
Add all the marshmallows into the butter and give it a good mix to allow the marshmallows to melt a bit - because these are vegan marshmallows they may melt a bit differently than traditional ones but its pretty much the same. Once the marshmallows are lookin pretty melty and gooey is when I go in with a drizzle of sesame oil and give that a good stir.
Step 3 - Add in the cereal + press into square pan
Right over everything, add in the crispy rice and corn flakes cereal. You can of course do all of one cereal and omit using two different ones. Over the mountain of cereal, sprinkle over the sugar and salt before quickly and gently mixing all of this together.
Once everything looks nicely combined, plop this marshmallow cereal mixture into your square pan. Using a spatula or piece of parchment, lightly press the mixture to make sure its evenly distributed. It should cool pretty quickly so once you are ready to cut into squares, flip the pan over onto a cutting board to release the marshmallow treats and to cut them into 9 squares or the shape of your choosing.
